Amma makes kootu kari often with lots of vegetables. She makes it with cucumber, pumpkin and so many veggies. She usually makes this to serve with any spicy gravies like pulikulambu or something like that. This is so healthy recipe, you can make it with zero oil too, just skip the seasoning part.
